Bautzen sits on a granite plateau above the Spree River and is widely recognized as the historical capital of Upper Lusatia. The thousand-year-old city captivates visitors with a nearly perfectly preserved medieval skyline punctuated by massive defensive towers. Its most iconic landmark is the Alte Wasserkunst from 1558, a heavily fortified waterworks that once pumped river water up into the city. Just steps away stands the Ortenburg castle, whose foundations trace back to the 10th century. Bautzen also serves as the political and cultural heart of the Sorbs, a Slavic minority with their own language; this dual heritage is visible on the bilingual street signs throughout the city. The Sorbian Museum within the castle gives an excellent deep dive into their rich traditions. When navigating the winding alleys of the old town, a visit to St. Peter's Cathedral is essential. As Germany's oldest simultaneous church, it has been shared by Catholics and Protestants since 1524. The city's culinary identity is famously tied to "Bautz'ner" mustard. You can sample rare varieties at the local mustard museum before trying the traditional mustard-crusted pork dish at a nearby tavern.
