In the sun-drenched highlands of La Massana and Ordino, perched at altitudes exceeding 1500 meters, high-mountain potato farming has become a cornerstone of Andorra's traditional agriculture. These potatoes, locally known as 'Trumfes de muntanya,' thrive in the mineral-rich soil and benefit from the dramatic temperature swings between warm days and cool alpine nights. This environment leads to a slower ripening process, which concentrates the natural sugars and starches, resulting in an exceptionally flavorful and firm potato. Many of these farms are small-scale, family-run operations that utilize sustainable methods, often harvesting by hand on steep, terraced plots. The high-mountain potato is highly prized in Andorran gastronomy, particularly for the classic dish 'Trinxat,' where its distinctive texture and slightly sweet taste are best showcased. Sold primarily at local markets and used in mountain lodges, these potatoes represent a commitment to preserving local biodiversity and supporting the resilient agricultural heritage of the high Pyrenees.
