Canaries Village is situated along the rugged western coastline of Saint Lucia, set between the towns of Anse La Raye and Soufrière. The community derives its name from the Amerindian word 'kanawe', referring to the traditional clay cooking pots once crafted here. Today, the village is most famous for its traditional cassava bread production. Visitors can observe the labor-intensive process of grating, drying, and baking the manioc root in large iron pans over open fires. The village itself is characterized by steep, narrow streets that descend toward a small bay where brightly colored fishing pirogues are moored. Unlike the more developed tourist hubs, Canaries gives an unhurried, authentic glimpse into the island's coastal life. The landscape is dominated by dense tropical greenery and the Catholic church, which stands as a central landmark for the tight-knit community of around 2,000 residents.
